Irradiation in food processing helps to improve food safety by eliminating harmful bacteria and foodborne pathogens, like Salmonella and E. coli, while also helping to extend shelf life by controlling spoilage organisms, inhibiting insect infestation, and delaying ripening or sprouting, allowing for longer, safer transport of perishable goods without compromising the foods quality, taste, or appearance, and reducing the need for chemical treatments.

This new volume, Fundamental Aspects and Applications of Irradiation Technology in Food Processing, explores the principles, methods, and technological advancements of irradiation as a food preservation technique, highlighting its impact on food safety, quality, and shelf life. The book also examines the chemical, biochemical, and microbiological effects of irradiation on food and its practical applications in the food industry.

The volume takes a comprehensive approach that not only covers the technical aspects of irradiation but also deeply explores the underlying scientific principles, such as the chemical, biochemical, and microbiological changes in food. Varsha Kanojia, PhD, is a Scientist (Processing and Food Engineering) in the Department of Processing and Food Engineering, College of Agricultural Engineering and Technology, Punjab Agricultural University, Ludhiana, India. She was formerly an Assistant Professor/Junior Scientist in the Division of Food Science and Technology at SKUAST-K, India, where she was associated with the All India Co-ordinated Research Project on Post-Harvest Engineering and Technology (AICRP on PHET), where she handled more than five research projects as principal or co-principal investigator. Currently, she is handling one research project as principal investigator and four research projects as co-principal investigator, funded by the Punjab Mandi Board, India. Dr. Kanojia has published over 20 research papers in peer-reviewed journals, three book chapters, and more than 10 popular articles. Her area of research is drying of fruits and vegetables, nonthermal processing, advanced and low-cost packaging of horticultural crops, their storage with cold chain management, and designing of processing equipment. She is advising several MTech scholars in Processing and Food Engineering. She received a young scientist award in 2022. She has participated in several national and international conferences and seminars. She graduated with a degree in Agricultural Engineering and has a masters degree in Processing and Food Engineering and a PhD in Processing and Food Engineering from Jawaharlal Nehru Krishi Vishwa Vidhyala Jabalpur, Madhya Pradesh. She has qualified ICAR NE–2015, 2017, 2021; GATE–2013; ICAR’S AIEEA-PG–2012. She is a recipient of UGC-NFOBC fellowships (2014-17).

Megh R. Goyal, PhD, PE, is a Retired Professor in Agricultural and Biomedical Engineering from the General Engineering Department in the College of Engineering at the University of Puerto Rico–Mayaguez Campus. He has worked as a Soil Conservation Inspector and as a Research Assistant at Haryana Agricultural University and Ohio State University. He was the first agricultural engineer to receive the professional license in Agricultural Engineering from the College of Engineers and Surveyors of Puerto Rico and was proclaimed as the “Father of Irrigation Engineering in Puerto Rico for the twentieth century” by the ASABE, Puerto Rico Section, for his pioneering work on micro irrigation, evapotranspiration, agroclimatology, and soil and water engineering. During his professional career of over 55 years, he has received many prestigious awards. A prolific author and editor, he has written more than 200 journal articles and several textbooks and has edited over 140 books.
